Here's how to make vegan consommé (onion koji), one of the essential seasonings for vegan cooking. With just onion koji, you can season all sorts of dishes, like soups, Japanese curries, and pastas! Say goodbye to consommé cubes and vegetable broth!
Grate the onion. You can use a food processor or hand blender.
300 g Fresh Onion
Place 1 in a bowl with the koji and salt and mix well.
100 g Fresh Rice Koji, 35 g Natural Salt
Transfer to a storage container. Close the lid or cover loosely with plastic wrap. Store in a place that is not in the sun, and let it sit there to mature.
Stir from the bottom with a spoon when the onions begin to color.
When the color changes to pink-beige and you can crush the koji rice with your fingers, it's a sign that it's ready. It takes about one week in summer and two weeks in winter to be done.
Close the lid tightly and store it in the refrigerator.
