    🥄Ingredients

    All you need now are two ingredients! You can make these two ingredients at home.

    • Soy sauce koji: has a ton of umami flavor, just like Dashi soy sauce, and is an absolute must for vegan cooking, added to Shio koji and Consomme onion koji.
    • Vegan mayonnaise: If you're not vegan, just use regular mayonnaise instead.

    Easy peasy! Just mix them in a 1:3 (Soy Sauce Koji:Vegan mayonnaise) ratio .

    🌸Full of UMAMI flavor- Soy Sauce Koji

    Soy sauce koji is a seasoning made by mixing and maturing soy sauce and Fresh Rice Koji. The aging process of soy sauce koji reduces the salty taste of soy sauce and makes it full of sweetness and umami. It also creates a rich and mellow flavor similar to that of egg yolk.

    🗻Health Benefits of Soy Sauce Koji

    It's not just about the flavor. You can also expect some health benefits from eating it.

    For one, it's low in salt. If you swap it in for soy sauce, you can cut back on the salt thanks to its umami flavor.

    Since soy sauce koji is a fermented food, if you eat it regularly, you can expect to see positive effects like healthier skin and relief from constipation by improving the intestinal environment.

    🍣How to make Soy Sauce Koji

    The recipe is simple: just put fresh rice koji and soy sauce in a storage container and let it mature at room temperature for about one week in summer and two weeks in winter.
