    VEGAN🧅Sweet Pickled Onions

    This is such a lovely recipe for vibrantly colored Sweet Pickled Onions that use beets. Thanks to the sweetness of the beets, these onions have a slightly sweet taste without adding sugar. But if you'd like, you can always sweeten them up by adding a bit of sugar!

    These Sweet Pickled Onions are so colorful, and they're perfect for adding a touch of flavor and visual interest to your meals. They're great for topping Vegan Sushi Rolls, Japanese Curry Rice, or Chirashi-Sushi, or just as a fun and flavorful addition to your everyday meals. Not only do they add a pop of color to your dining table, but they also make for a delightful palate cleanser.

    🌹材料

    All you need is four ingredients!

    cooked beets, onion, vinegar, salt
    • Beets (cooked)
    • Onions (fresh is best)
    • Natural salt
    • Apple cider vinegar (if using rice vinegar, use a moderate amount or add a bit of sugar to balance the flavor)
    • Sugar (add sugar when you want it to taste sweet).

    🍒Instruction

    Easy peasy!

    1. Cut: Cut the onion in half and slice them so as to break their fibers (horizontally).
    💡If you're concerned about the pungency, simply soak the onions in water for 5-10 minutes and drain well before using. But if you marinate them overnight after mixing them with the seasonings, the pungency will decrease and the sweetness will increase. So you can choose whichever method you prefer.

    1. Mix: Add the sliced beets and seasonings to a glass container. Let it sit for at least 30 minutes, stirring a few times. When the flavors are well blended and the onions are nicely colored by the beets, the dish is ready.
    💡 If you can, let it sit overnight in the refrigerator to tone down the pungency and bring out the sweetness.

    💄For a beautiful color finish

    Here's how to get that beautiful color finish:

    • Give it more time to sit.
    • Slice the onions as thinly as possible.

    It compares "onions just after pickling" with "onions left to sit for 30 minutes". Even though the soaking time is short, the onions are quite vividly colored. Just looking at the bright pink color makes me feel happy 😊

    BEFORE: Here are the onions right after they were pickled. The color of the beets has not yet been absorbed into the onions.

    AFTER: After 30 minutes of pickling. The color of the beets has been beautifully transferred to the onions. If you let it sit overnight, they turn a more vibrant pink.。

    🌝Storage

    The sweet pickled onions made with this recipe should be stored in the refrigerator in a food container. And it's best to eat them within five days.

    Ingredients
      

    • 50 g Fresh Onion

    A

    • 20 g beets (cooked)
    • 2 teaspoon apple cider vinegar ( or rice vinegar)
    • 1 pinch Natural Salt
    • sugar (optional)

    Instructions

      50 g Fresh Onion
    • Add sliced beets and A to 1. Mix well.
      20 g beets
      2 teaspoon apple cider vinegar
      1 pinch Natural Salt
      sugar
    • Allow to rest for at least 30 minutes, stirring several times in the process.
    • When the flavors are well blended and the onions are nicely colored, the dish is ready. If possible, let it marinate overnight to reduce the pungency and increase the sweetness.

      I let it stand overnight and it turned out quite sweet. I will try making it with more sugar depending on the use.
