    Vegan Soybean Hummus Sandwich

    Here's a simple vegan sandwich recipe featuring soy hummus with a hint of sansho (Japanese pepper) and spring vegetables like cilantro and broccoli.

    This vegan sandwich recipe features homemade soy hummus.

    Making soybean hummus is easier than making chickpea hummus. Also, the high-protein and high-fat soybeans allow you to make creamy and delicious hummus without using oil or tahini. You don't even need to make a sandwich; soybean hummus is delicious on its own. Please make a large batch and try it on vegetables or as the base for Siraae (Japanese mixed vegetable salad).

    Ingredients

    It's just a sandwich, so you can put whatever in it that you like, but here are some ingredients I suggest.

    Bread, soy hummus, broccoli, cucumber, cilantro
    • Soy Hummus: The main ingredient in this sandwich. Check my Creamy Oil & Tahini Free Soybean Hummus recipe.
    • Cilantro: This is the perfect match with soy hummus. I love to make this sandwich with just cilantro and soy hummus. Simple is the best!
    • Broccoli: If you want to add a vegetable to make the sandwich hearty, broccoli is a great choice. Use broccoli that's been briefly boiled to keep it from turning mushy. For thin stems, cook for one minute. For thick stems, cook for about a minute and 30 seconds. You can adjust them to suit your taste. If you have asparagus on hand, I think it would pair well with the sandwich too.
    • Cucumber: I like to add cucumbers to my sandwiches to make them more refreshing. Cucumbers are pretty pricey these days, so I only use them when I have some left over in the fridge.
    • Bread: Just use your favorite kind of bread.

    Instructions

    Once you've got all the ingredients ready, just layer them up between some bread. It's easy to make.

    1. Preparation ❶: Make soybean hummus. Click here to learn how to make it.
    2. Preparation ❷: Wash cilantro and chop into bite-sized pieces. Boil the broccoli to your desired softness and drain in a strainer. Slice the cucumber to the desired thickness.
    3. Sandwich: Take two slices of bread and spread soybean hummus on one side. Make a sandwich by placing your favorite veggies on the first slice of bread and covering it with the second.
    4. Cut: Cut in half and that's it!

    Q: Can vegans eat bread?

    As long as the bread doesn't contain animal products like dairy or eggs, it's all good. If you're having a sandwich party for vegans, you'll also need to make sure to use vegan mayonnaise on bread. Here's a recipe for creamy soy mayonnaise that I think you'll like.

    Here's a recipe for a vegan sandwich with a rich and smooth soy hummus. I love putting cilantro and soyhummus on the sandwich. If you want to make it more filling, try adding broccoli or cucumber. Have fun arranging it however you like!
