A simple vegan sandwich made with creamy, smooth soybean hummus with a hint of sansho (Japanese pepper) and spring vegetables like cilantro and broccoli.

Spring arrived, and I made a sandwich with my favorite homemade soybean hummus — my own Japanese twist on classic hummus. Soybeans are thin-skinned and rich in fat, so the hummus turns out creamy without much effort. No olive oil, no tahini. Just a little miso, some ground sesame, and a touch of citrusy sansho pepper.

It's delicious on its own. Sometimes I scoop it up with a spoon, the way you'd dig into a jar of peanut butter.

Sandwiching it between bread with vegetables is another lovely way to enjoy it. Here I chose cucumber, broccoli, and cilantro, but other vegetables work well too. Roasted carrot, maybe. Or beets, or turnip. Vegetables in different colors would make it even more fun.

Ingredients

It's just a sandwich, so put in whatever you like. Here's what I usually reach for.

  • Soy Hummus: What this sandwich is all about. My Creamy Oil & Tahini Free Soybean Hummus recipe.
  • Cilantro: The perfect match for soy hummus. Sometimes I skip the other vegetables entirely — just cilantro and hummus is enough. That's how much I love the combination.
  • Broccoli: Broccoli makes the sandwich heartier. Boil it briefly so it doesn't go mushy — a minute for thin stems, about a minute and a half for thick ones. Adjust to your own taste. Asparagus would work well here too.
  • Cucumber: Cucumbers add a bit of freshness. Early spring is when cucumbers get expensive here in Japan, so I only add them when there's some leftover in the fridge.
  • Bread: Your favorite kind.

Instructions

With everything ready, it's just a matter of layering it between bread.

  1. Preparation ❶: Make the soybean hummus. Here's how.
  2. Preparation ❷: Wash the cilantro and chop into bite-sized pieces. Boil the broccoli to your liking and drain. Slice the cucumber.
  3. Sandwich: Spread soybean hummus on one side of each bread slice. Layer on your vegetables, then close the sandwich.
  4. Cut: Cut in half, and dig in!

FAQ

I don't like cilantro. Can I make this without it?

Cilantro is what makes this sandwich a little different, but soy hummus with just cucumber and broccoli is still a good sandwich on its own. Parsley or basil would change the flavor quite a bit, so leaving it out is the simpler option.

What can I use instead of sansho pepper?

Black pepper is the closest substitute. The citrusy note of sansho won't be there, but the sandwich still works well with it.
